fix(ci): remove outdated analysis mode

Hey, just wanted to let you know that we replaced the analysis for memory profiling with memory.

This will make it easier to use a matrix which allows passing the same value to cargo codspeed and the CodSpeedHQ/action, removing the need for an extra if statement / job. See the changes in this PR for the simplified/fixed version.
