fix(motion-graphics): remove nonexistent stat block

Summary

• remove the nonexistent stat-motion registry block from the motion-graphics catalog map
• align the stat row with its category module: install apple-money-count when appropriate, otherwise hand-author from counting-dynamic-scale and stat-bars-and-fills
• add a regression test that prevents the stale block name from returning

Reproduction

On published 0.7.56, npx hyperframes add stat-motion exits with Item "stat-motion" not found in registry, while the motion-graphics catalog map advertises it as a generic stat option.
