Removes redundant no-op tag assignments from the Envoy AI Gateway LAL rule so the config only adds the intentional ai_route_type tag while relying on existing LogData tags for the rest.

- Remove self-copy tag assignments (e.g.,
tag 'x': tag("x")) from the LLM and MCP extractor blocks inenvoy-ai-gateway.yaml. - Add a corresponding entry to the 10.5.0 changelog.
