This updates our macos application icon based on the new svg icon.
It generates both the newer Assets.car as well as the fallback AppIcon.icns.
It support liquid glass.
Note that we avoid undoing all this work by not using setWindowIcon() in gui/main.cc for macos (platform == cocoa).
The assets can be reduced in size when the minimum mac version is greater than 12.
This also modernizes Info.plist to more closely match what modern Xcode (26.5) would produce compared to the very old format cmake uses.
