update snakeyaml to 2.5

Context

snakeyaml 2.0 version is 3 years old and requires java.desktop in a jlink assembled JRE running a vert.x backend service. The problem was fixed in 2024 [1] https://bitbucket.org/snakeyaml/snakeyaml/commits/2ca1828cc0a007de7e04eb5f5af5aaa6288a7cbe) and shipped in 2.3.
Please update to snakeyaml to 2.5 (latest).
