[Feature]: How many TipTap documents are allocated per organization? #288

Suggestion / Feature Request

As a platform admin, I want one or more backend endpoints that will provide the following metrics related to TipTap document usage:

1. How many total [non-archived] TipTap documents are currently allocated by all Organizations?
2. What's the total TipTap document size in MB across all Organizations?
3. How many TipTap documents is a given Organization using?
4. What's the total TipTap document size in MB that a given Organization is using?
5. Are there any TipTap documents that are abandoned (i.e. they no longer have a parent coaching session associated with them because that session has been deleted)?
