Update or Replace UploadThing

UploadThing integration has been causing multiple issues (tagged below).

We should evaluate upgrading to the latest UploadThing SDK, seeing what the compatibility would look like and update docs with examples.

Any community input is welcome! if you’ve experienced other issues, please share them here.

Closing this out as the @payloadcms/storage-uploadthing adapter is being depreceated (see #17272), due to low usage and maintenance burden. Going forward we look to expand the storage adapter API.
