Consider Supporting Light/Dark Mode Settings in the CSS

Related to issue #1035. Consider developing color schemes for both light and dark modes.

Describe the solution you'd like

Given that the project is already using SCSS for the management of styling, a solution based around SCSS would be the preferred approach.

Describe alternatives you've considered

I have not considered any alternatives, though the project I using RCT on also uses Tailwind CSS 4.
