Allow per-page canonical URL

When docs have multiple versions search engines crawl and link to old version of the docs because the canonical url is automatically set to the page's URL.

We need a way to override this to use a /latest/ version or manually link it to whatever version of our page is the latest version.

Mintlify currently only allows canonical setting at a global level.
