Include Sim in 0.2 release

While we have a Sim preset image, we have yet to actually use this in our production examples. Additional @shmuelk has informed us that the SIm and GIE will be going through some changes that are not backwards compatible for their new release in the next week or some. This issue is to track testing and Incorporating those changes into 1.1 release.

The llm-d-inference-scheduler and llm-d-inference-sim, will hopefully, have new releases this week, that as Greg said will upwards incompatible
