Interested in building on Windows?

I'm curious how interested ya'll are on in accepting contributions to get this library building on Windows?

I've got it working in my fork here: main...stevenbrix:swift-transformers:windows

Aside from compiling out some CoreML and Accelerate usage, it wasn't all that bad. I'm not sure what your feelings are on the changes made to TensorUtils which are making up for missing Accelerate xcframework APIs. I'm curious to get ya'lls thoughts. Thanks!

We've taken a look and I think this makes a strong case for splitting out more Products, since CoreML et al will never work on Windows (instead of flagging it out).
