fix: remove dead FairOS link and stale Sepolia network entry

Salvages two still-valid fixes from the now-obsolete PR #794:
- Remove the dead FairOS link from the Fair Data Society page
- Remove the Sepolia network config block from the Bee FAQ

PR #794's other changes are superseded: the Python link checker it
targeted was replaced with TypeScript (#813), and awesome-list.mdx is
now build-time generated and gitignored (#811).
