Currently mcp-chat-backend uses the deprecated @google/generative-ai which leads to several issues with the current gemini versions.

Additionally the new package also provides support for the VertexAI API, which could be added in scope of this

👍 Expected behavior

• Update the gemini provider to @google/genai
• Add vertexai as a new provider type
