What is the outcome that you are trying to reach?

Have latest versions of TF providers/modules, EKS, Strimzi operator and Kafka in the streaming/kafka blueprint

Describe the solution you would like

Upgrade versions to the latest (where possible), update broken definitions/manifests, deprecate unneeded components (aws-auth), test and validate the blueprint
