Is there a list of valid values for each configuration field?

Sorry if this has already been asked or if it is in the documentation.

Is there a list of valid values for each configuration field? I am mostly asking this so that correctly setting the default currency and time zone to US Dollar and America/New York respectively, but would be nice to see valid values for all of the configuration fields.
