Add downscaling to given DPI and color conversion to grayscale. #128

Brief Description
My usecase. I am scanning old paper documents for digital archive purpose.
Detailed Description
Scanner interface is such primitive that I have no choice so I am scanning into 300dpi, color, bitmpas (BMP) which give file about 24 MB big.
For documents archive purpose I need to convert that to 150dpi, grayscale, JPG (finally PDF but I don't expect such option from this tool) to make files smaller.
Could you please add:
to Modify -> Downscaling drop down menu the dpi option
"Grayscale" checkbox in Output -> Format section.
As workaround for dpi I just selected 50% but I don't have workaround for grayscale.
